Specialties

Our wood oven bread is something very special. The basis is the pre-dough, which always ferments overnight and can thus develop its full aromas. With a piece of this pre-dough and pure spelt flour, the dough is then mixed. Only flour from the region is used. Of course, this dough also gets enough time to rise. The bread is baked in our direct wood-fired oven and thus forms the wonderful crust and the fine wood-fire aroma.

Chocolat Yannick

The Chocolat Yannick is a creation of Ruth and Urs Rössler. In an elaborate process with several test series, the exact recipe for this exquisite chocolate was determined. Cocoa beans from the best countries of origin were repeatedly mixed and tasted. The goal was to develop pure, mild, dark chocolate with a subtle fruity note and moderate sweetness and low acidity. These characteristics were found in a blend of cocoa beans from different origins, namely St. Domingo, Mexico and Peru. The beans from St. Domingo and Mexico provide the pleasant cocoa note. The aromatic and fruity, however, the chocolate owes mainly to the beans from Peru.
